root beer madness
There is something so nostalgic about a root beer float. It reminds me of hot summer days as a child lounging around in the backyard. It was a rare treat yet I vividly remember the foam rising up when the scoop of vanilla and root beer met (that was my favourite part). We keep a couple of cans around just for those special occasions when a float is needed (usually times of celebration or high stress). The guys of Baked understand this and have created the perfect cake compliment with the Root Beer Bundt Cake. This simple to make cake does not play around with its root beer flavour. It takes two cups of root beer (don’t even think of diet root beer) plus a root bear fudge frosting. I chose a simple icing sugar dusting because I hate frosting cakes and most frostings are too sugary.
Surprising flavours in cakes are one of my favourite things and this cake was definitely up for the task. The deep rich flavour (from cocoa powder) and the syrupy taste of the root beer were a perfect complement. I did have a bundt malfunction but I think that’s more the pan than anything else. It’s a grown up option with a touch of childhood whimsy. I know I’ve said it before but “Matt Lewis and Renato Poliafito, I think I love you.”

YUM! I love Root beer, this is certainly something I will try (and eat the whole thing myself!)
