ffwd – cinnamon-crunch chicken

When it came time to vote for our top food choices for September this was my number one pick. There was just something about the description of the sweet cinnamon and crunchiness that lured me in. But there must be something in the air that made this recipe fail. I couldn’t find the requested speculoos and settled for Simple Pleasure Spice Snaps…maybe that was my first mistake. The second being unable to locate the crème fraiche and settling for heavy cream, which Dorie says, is fine but no really. The third was using a small pan and having to cook the chicken in batches while the crushed cookies melted away to nothing in the cream mixture. When I mixed it all together a warm cinnamon smell did not waft up to greet me. It was kind of a non-smell and when I ate it was lacking the crunch or flavour. Was it the recipe or just me (probably me, I blame the change in temperature)? Will I try it again, not likely unless I come across this mystery speculoos. Until then I will be content finishing off the box of my spice snaps with a nice warm cup of tea. Take that cold weather.

    Sorry you didn’t get the best out of this dish…I used digestive biscuits and added my own cinnamon powder to it and I mixed in the biscuits crumbs with the creme only when I needed it and not before coz I wanted a more crunchy texture. If too early we mix the two , the biscuit crumbs will soften and the effect will not be a crunchy dish :) Anyway , I am sure yours taste good too. Have a nice weekend :)

      That’s a great suggestion and it sounds delicious. After seeing you post and photos I realize I need to try it again. I’m going to use your photos as a reference.

    omg i made fresh speculoos for this recipe ad wound up eating as many as I put in the sauce (more than two)… mine was way sour but still had flavor!

      From scratch! Good idea but I think I too will eat more than what’s required for the recipe. I’ll have try it next time just to be sure.
